Ingredients:

  • 1 pound salmon, cut into 1-inch pieces
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
  • Lemon wedges, for serving (optional)

Instructions:

  1. Preheat your grill to medium-high heat.
  2. In a small bowl, whisk together the olive oil, lemon juice, minced garlic, oregano, and salt and pepper.
  3. Thread the salmon pieces onto skewers, dividing them evenly.
  4. Brush the salmon skewers with the olive oil mixture.
  5. Place the salmon skewers on the grill and cook for 4-6 minutes on each side, or until the salmon is opaque and flakes easily with a fork.
  6. Serve the grilled salmon skewers hot, with lemon wedges on the side if desired.

Note: You can also add other ingredients to the skewers, such as sliced onions, sliced bell peppers, or cherry tomatoes, for extra flavor and nutrition. Just thread them onto the skewers with the salmon and grill for a few minutes before serving. You can also add other herbs and spices to the olive oil mixture, such as chopped parsley, basil, or dill, for extra flavor.
