Here is a recipe for salmon cakes:

Ingredients:

  • 1 pound salmon, cooked and flaked
  • 1/2 cup mayonnaise
  • 1/4 cup finely chopped scallions
  • 1/4 cup finely chopped parsley
  • 2 eggs, beaten
  • 1/2 cup bread crumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 teaspoon paprika
  • Salt and pepper, to taste
  • Vegetable oil, for frying
  • Lemon wedges, for serving (optional)

Instructions:

  1. In a large bowl, mix together the cooked salmon, mayonnaise, scallions, parsley, eggs, bread crumbs, Parmesan cheese, paprika, and salt and pepper.
  2. Form the salmon mixture into 8 patties.
  3. Heat a few inches of vegetable oil in a large, heavy skillet over medium-high heat.
  4. Add the salmon cakes to the skillet and cook for 3-4 minutes on each side, or until they are golden brown and heated through.
  5. Remove the salmon cakes from the skillet with a slotted spoon and drain on paper towels.
  6. Serve the salmon cakes hot, with lemon wedges on the side if desired.

Note: You can also add other ingredients to the salmon mixture, such as minced garlic, grated lemon zest, or chopped herbs, for extra flavor. You can also top the salmon cakes with a sauce, such as a tartar sauce or a rémoulade sauce, for added flavor. Just be sure to prepare the sauce while the salmon cakes are cooking.
