Here is a recipe for halibut cakes:

Ingredients:

  • 1 pound halibut, cooked and flaked
  • 1/2 cup mayonnaise
  • 1/4 cup finely chopped scallions
  • 1/4 cup finely chopped parsley
  • 2 eggs, beaten
  • 1/2 cup bread crumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 teaspoon paprika
  • Salt and pepper, to taste
  • Vegetable oil, for frying
  • Lemon wedges, for serving (optional)

Instructions:

  1. In a large bowl, mix together the cooked halibut, mayonnaise, scallions, parsley, eggs, bread crumbs, Parmesan cheese, paprika, and salt and pepper.
  2. Form the halibut mixture into 8 patties.
  3. Heat a few inches of vegetable oil in a large, heavy skillet over medium-high heat.
  4. Add the halibut cakes to the skillet and cook for 3-4 minutes on each side, or until they are golden brown and heated through.
  5. Remove the halibut cakes from the skillet with a slotted spoon and drain on paper towels.
  6. Serve the halibut cakes hot, with lemon wedges on the side if desired.

Note: You can also add other ingredients to the halibut mixture, such as minced garlic, grated lemon zest, or chopped herbs, for extra flavor. You can also top the halibut cakes with a sauce, such as a tartar sauce or a rémoulade sauce, for added flavor. Just be sure to prepare the sauce while the halibut cakes are cooking.
